In this case the term of endearment is used in place of a name - You might say "Yes, Mary". Mary is the name and capitalized. You should capitalise the "Yes, Dear" because you are using it as a name. If, on the other hand, you refer to "My dear" then it's not being used as a name and wouldn't be capitalized. Granted terms of endearment are not names you could use everywhere.
